St. Patricks Day Corned Beef and Cabbage Dinner Recipe


Corned Beef

3-4-pound corned beef brisket with Seasoning Packet

Rinse off and place Brisket and Seasoning packet, in a Crock Pot or large cooking pot on the stove. Cover with water, put the lid on and set on high for Crock Pot and Medium High for stove method. Cook 50 Minutes per pound.  When your brisket is done, it should be very tender and will have shrunk down some. Set aside and cover with foil.
Tip: In the last hour the brisket is cooking you can start preparing the rest of the dinner.

Potato’s

5 Medium Red Potato’s
3 Cups Brisket Broth
1-2 Cups Water
1 Bay Leaf
1/2 Stick Butter
1 tsp Pepper
1 TBS Dried Parsley or 3 TBS Fresh Parsley

Wash off potato’s and cut into bite size pieces. Add brisket liquid, water and potato’s to pot .
Put in Bay leaf, Pepper to taste and boil until fork tender. Drain the liquid, toss with butter, another TBS Parsley leave in pot covered to stay hot. Taste to see if you need more salt.

Cabbage

1 Medium Head Cabbage
4 Strips Bacon
1 TBS Sugar
1/2 cup or ladle full of Broth from Brisket
1 tsp Pepper (fresh is you have it)

On a cutting board, cut sliced bacon into bits. In a deep skillet add a little oil and bacon.Cook until crisp. Cut up cabbage in bite size pieces, removing the core from center and add to pan.
Cover and simmer on low to med low stirring occasionally for about 10 Minutes.
Add broth from brisket cover and let simmer another 5 minutes.
If you like your cabbage a bit sweeter, add the sugar in the last 5 minute stage.
You want your cabbage tender but not too soft.

Carrots

4-5 Carrots( large)
1/4 Cup Sugar
4 TBS Butter

Cut up carrots in sticks (see video) and place in sauce pan or small cooking pot. You can also use baby carrots for this. Add butter and sugar stir well.. Cover and let simmer on Med for about 20 minutes. Uncover and turn to high or med high and let liquid caramelize on the carrots.
** Note: This will happen quickly, do not walk away.

When you serve your brisket, you want to cut it against the grain to be sure it is tender. This means you look at what direction the lines are going and cut the opposite way. Ex: If the lines in the meat are going East to West., than cut North to South.

Plate up with 1/4 inch thick slices of brisket, add a good spoonful each of the Potato’s, Cabbge and Carrots. You may also serve with hot rolls or your favorite bread.
It will make for a lovely plate and delicious meal!
