Lemon Poppy Seed muffins are the most requested muffin from my family and friends as an accompaniment to breakfast. They are easy and quick to make. Serve with eggs, bacon, sausage or your favorite fruit.

1 Can Lemonade concentrate frozen
2 Eggs
4 tsp Cornstarch
1-Cup Cool Whip
2-3 drops yellow food coloring
Fresh fruit cut into bit size pieces and berries
Combine lemonade concentrate, eggs, cornstarch and sugar in the top of a double boiler.
Cook until thick, stirring constantly. Remove from heat.
Add food coloring and let cool.

2 Tbs Instant Coffee
½ cup Sugar
1 Tbs Coco (unsweetened)
1 Tbs Mint Leaves (crushed)
1 cup Water
3 cups Milk
Whipped Cream
In a saucepan combine coffee, mint, sugar, and water.

1 small can Peaches in light syrup(sliced or small chunks)
4 cups water
1/2-cup sugar
½ cup fresh lemon juice
1/2 tsp Vanilla
Mint
Add to blender, water, sugar and lemon juice.
Blend until sugar is dissolved.
Add the peaches and the juice from the peaches.
Blend until peaches are very small pieces.
Stir and serve over large glasses of ice.
