Lemon Poppy Seed muffins are the most requested muffin from my family and friends as an accompaniment to breakfast. They are easy and quick to make. Serve with eggs, bacon, sausage or your favorite fruit.

6 lg. cooking apples
3/4 c. orange juice
2 tsp. grated orange rind
1 tsp. lemon rind grated
3/4 c. blush or light wine

1 ready bake graham cracker pie crust
1- 8 oz. cream cheese
1 small cool whip
1 can fruit pie filling
1/2 cup powdered sugar
Mix cream cheese and cool whip until smooth.
